Recipe Instructions:

  1. Prepare the Frogs:

    • Carefully clean the frogs, ensuring they are thoroughly washed inside and out under running water.
    • Place the cleaned frogs in a bowl and add the marinade ingredients: dry white wine, a dash of salt and pepper, finely chopped parsley, half of a finely chopped onion, and a trace of nutmeg.
  2. Marinate:

    • Stir the frogs well in the marinade to ensure they are evenly coated.
    • Let the frogs marinate for at least one hour to infuse them with the flavors.
  3. Dry:

    • After marinating, remove the frogs from the marinade and pat them dry with a clean cloth. This step ensures a crispier coating when frying.
  4. Coat and Fry:

    • Prepare two shallow bowls or plates. In one, place the flour, and in the other, beat the egg.
    • Take each frog and coat it first in the flour, shaking off any excess, then dip it into the beaten egg until fully coated.
    • In a frying pan, heat the virgin olive oil until nicely hot.
    • Carefully place the coated frogs in the hot oil and fry them until golden brown and crispy on both sides, about 3-4 minutes per side.
  5. Serve:

    • Once fried to perfection, transfer the frogs to a serving platter lined with paper towels to drain any excess oil.
    • Serve the frogs hot, garnished with lemon wedges on the side for a refreshing touch.
