Ingredients:

  • 3/4 onion, chopped
  • 2 1/2 eggs
  • 1 tbsp soy sauce
  • 3 drops sesame oil
  • 3 chicken breasts, diced
  • 3 carrots, sliced
  • 8 cups cooked rice
  • 1/2 cup green onions, chopped
  • 1/2 cup bean sprouts
  • 4 tbsp light soy sauce

Instructions:

Step Description
1 Heat 1 tablespoon of oil in a wok. Add chopped onions and stir-fry until they turn a nice brown color, about 8-10 minutes. Remove from the wok.
2 Allow the wok to cool slightly.
3 In a bowl, mix eggs with 3 drops of soy sauce and 3 drops of sesame oil. Set aside.
4 Add 1/2 tablespoon of oil to the wok, swirling to coat surfaces. Add the egg mixture. Work quickly, swirling the egg until it sets against the wok. When the egg puffs, flip it and cook the other side briefly. Remove from the wok and chop into small pieces.
5 Heat 1 tablespoon of oil in the wok. Add the diced chicken, sliced carrots, peas, and cooked onion. Stir-fry for 2 minutes.
6 Add the cooked rice, chopped green onions, and bean sprouts, tossing to mix well. Stir-fry for 3 minutes.
7 Add 2 tablespoons of light soy sauce and the chopped egg to the rice mixture. Fold in and stir-fry for 1 more minute.
8 Serve hot and set out additional soy sauce on the table if desired.
