Instructions:

  1. Prepare Chicken:

    • Rinse chicken breasts with cool water.
    • Slightly pound chicken if they are too thick (ideal thickness is about 3/8 inch).
    • Cut cheese and ham slices to fit in the middle of the chicken breast, leaving about 1/2 inch of space from the edges.
    • Fold edges of chicken over the ham and cheese and secure thoroughly with toothpicks. Use as many toothpicks as necessary to securely hold chicken together without exposing the filling.
  2. Prepare Breading:

    • Thoroughly mix flour, garlic powder, salt, cayenne pepper, dry basil, black pepper, and paprika in a medium-sized bowl. Set aside.
    • Prepare another small bowl with 1/2 cup of milk. Set aside.
  3. Cook Chicken:

    • In a medium-sized skillet, melt 1 tablespoon of butter over medium heat, then add canola oil.
    • Increase skillet temperature to medium-high.
    • Submerge each filled chicken breast in milk, then transfer to the breading mixture, coating each side carefully.
