Chelo (Persian Steamed Rice) Recipe

Instructions:

  1. Prepare the Rice:

    • Soak overnight or for at least 6 hours. For other long-grain rice, soak in salt water for about 2 hours.
  2. Boil the Water:

    • In a heavy 3 to 4 quart saucepan with a tight-fitting lid, bring 6 cups of fresh water to a boil over high heat.
  3. Parboil the Rice:

    • Drain the soaked rice thoroughly and add it to the boiling water.
    • Stir once or twice and boil briskly, uncovered, for 5 minutes.
    • Drain the rice in a sieve.
  4. Steam the Rice:

    • Pour 1 cup of fresh water and melted butter into the saucepan.
    • Add the parboiled rice, mounding it slightly in the middle.
    • Cover the pan tightly with aluminum foil and set the lid in place.
    • Simmer over moderate heat for 15 to 20 minutes until the grains are tender and have absorbed all the liquid.
  5. Serve:

    • Serve the Chelo immediately.
    • Traditionally, when paired with skewered broiled meat or chicken, the rice is served mounded into individual portions with a well in the center.
    • Place a pat of butter on top, drop in a raw egg yolk, and sprinkle with salt, black pepper, and sumac if desired.
