Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup flour
  • 1 cup milk
  • Salt, to taste
  • 8 strips bacon
  • 1 package frozen chopped spinach, thawed and drained
  • 1 cup sour cream
  • 1 tablespoon fresh basil, chopped
  • 8 slices provolone cheese

Instructions:

  1. Prepare Chicken: Pound the chicken breasts to flatten them evenly.

  2. Create Coating: In a bowl, mix 1 tablespoon of flour with 1 cup of milk. Season with a pinch of garlic salt and salt to taste. Pour this mixture over the chicken breasts, ensuring they are well coated. Cover and refrigerate to marinate while preparing the remaining ingredients.

  3. Cook Bacon: Fry the bacon until crisp, then set it aside. Reserve the bacon grease for cooking.

  4. Prepare Spinach Mixture: Thaw the frozen chopped spinach and squeeze out excess liquid. In a separate bowl, mix the spinach with sour cream, adding a pinch of garlic salt, salt, and 1 tablespoon of fresh, chopped basil. Combine well and refrigerate until needed.

  5. Prepare Chicken for Cooking: Remove the chicken breasts from the refrigerator and drain off any excess marinade. Pat them dry with a paper towel.

  6. Cook Chicken: In a skillet, sauté the chicken breasts in the reserved bacon grease for 8 to 10 minutes, or until they are golden brown on both sides.

  7. Assemble Dish: Transfer the cooked chicken breasts to a 9×12 elongated dish or pan, ensuring the sides are not too deep.

  8. Add Spinach Mixture: Spoon the prepared sour cream and spinach mixture over the top of each chicken breast.

  9. Top with Cheese and Bacon: Place a slice of provolone cheese on each chicken breast, then finish by topping with a strip of crisp bacon.

  10. Bake: Preheat the oven to 350°F (or 325°F if preparing the dish in advance). Bake the assembled dish for about 20 to 30 minutes, until the cheese is melted and bubbly. If preparing ahead of time, bake for longer.

  11. Serve: Once baked, remove the dish from the oven. Serve Jim’s Chicken Provolone hot, alongside your favorite side dishes.

  12. Storage: This dish reheats well, making it ideal for leftovers. Store any remaining portions in an airtight container in the refrigerator.
