  • 1 cup honey 🍯
  • 1/2 cup applesauce 🍏
  • 1/2 cup butter 🧈

  • 1/2 teaspoon ground cardamom

  • 1 cup walnut pieces

  • 3 cups dried currants
  • 1-2 cups dried dates 🌴

    • Simmer this mixture over low heat for about 10-15 minutes, stirring occasionally.
    • Taste the mixture and adjust the spices if desired. Add more if your spices are on the older side.
  2. Preheat and Combine:

    • Preheat your oven to 175 degrees F (80 degrees C).
    • In a very large oven-proof bowl, combine the oats, toasted wheat germ, pecan pieces, walnut pieces, half of the dried coconut, and half of the mixed dried fruit.
  3. Mix and Bake:

    • Toss the dry ingredients thoroughly with the warm honey mixture until everything is well coated.
    • Spread this mixture evenly on a baking sheet lined with parchment paper.
    • Bake in the preheated oven for about 45 minutes, stirring every 15 minutes to ensure even baking.
    • After 45 minutes, add the remaining coconut and dried fruit to the mixture, and continue baking for another 30 minutes, stirring every 15 minutes.
    • The granola should be golden brown and crunchy when done.
  4. Cool and Store:

    • Once baked, remove the granola from the oven and test for dryness. It should feel fairly dry to the touch.
    • If needed, bake a little longer until desired dryness is achieved.
    • Allow the granola to cool completely in the baking sheet.
    • Once cooled, transfer the granola to airtight containers or plastic bags for storage.
