  • 1 zucchini, diced
  • 1 can (15 ounces) red kidney beans, drained and rinsed
  • 1 can (15 ounces) white kidney beans, drained and rinsed
  • 1/2 cup broken spaghetti pieces
  • Fresh Parmesan cheese, for garnish

Instructions:

Step Description
1 Heat butter and olive oil in a large heavy pot or Dutch oven over medium heat.
2 Add diced carrots, chopped onion, sliced celery, cubed potatoes, and sliced leek. Saute for about 10 minutes, stirring occasionally, until vegetables are tender.
