Collards with a Twist (of Lemon that is!)

Ingredients:

  • 1 gallon water 🚰

Instructions:

  1. Prepare Collards:

    • With a sharp knife, trim away the tough stems from the collard leaves.
    • Tear the leaves into bite-sized pieces.
  2. Prepare Cooking Liquid:

    • In a large 6-quart pot, mix the salt and lemon juice into the water.
    • Add the collard greens to the pot. They will cook down to about half their original volume.
    • Stir in the bacon drippings, minced garlic, and minced jalapeno.
  3. Cooking Process:

    • Bring the pot to a boil over high heat.
    • Once boiling, reduce the heat to medium-low.
    • Cover the pot and allow the collards to simmer gently for 30 minutes, stirring occasionally.
  4. Serve:

    • Using a slotted spoon, transfer the cooked collards to a serving dish.
