Description:

Indulge in the delightful flavors of this traditional Mexican dessert, Capirotada (Bread Pudding), where toasted bread melds with a sweet and spicy syrup, enriched with layers of cheddar cheese and plump raisins, creating a comforting treat to satisfy any sweet tooth.

Ingredients:

  • 8 slices of bread, toasted and broken into 2″ pieces
  • 2 cups water
  • 1 cup sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ground clove
  • 1/4 teaspoon salt
  • 1 1/2 cups shredded cheddar cheese
  • 1 1/2 cups raisins
  • 2 tablespoons butter

Instructions:

  1. Prepare Bread:

    • Start by toasting the sliced bread until golden brown, then break it into 2-inch pieces. Set aside.
  2. Make Syrup:

    • In a saucepan, combine water, sugar, cinnamon, nutmeg, ground clove, and salt to make a fragrant syrup.
    • Bring the mixture to a gentle boil over medium heat, stirring occasionally to dissolve the sugar.
    • Once boiling, reduce the heat to low and let the syrup simmer for about 10 minutes, allowing the flavors to meld and the mixture to slightly thicken.
  3. Preheat Oven:

    • While the syrup simmers, preheat your oven to 350°F (175°C). Grease an oblong baking pan generously with butter to prevent sticking.
  4. Layer Ingredients:

    • Once the syrup is ready, it’s time to assemble the Capirotada layers. Begin by spreading a layer of toasted bread pieces evenly at the bottom of the prepared baking pan.
    • Sprinkle a portion of shredded cheddar cheese over the bread layer, followed by a scattering of raisins.
    • Repeat the layers until all ingredients are used, ensuring the top layer is bread pieces.
  5. Pour Syrup and Bake:

    • Carefully pour the warm syrup over the layered bread mixture, ensuring it evenly coats all the ingredients.
    • Place the baking pan in the preheated oven and bake for approximately 20 minutes, or until the bread has absorbed the syrup and the top is golden brown.
  6. Serve and Enjoy:

    • Once baked, remove the Capirotada from the oven and allow it to cool slightly before serving.
    • This delightful dessert can be enjoyed warm or cold, depending on your preference.
    • For an extra indulgence when serving warm, top each portion with a dollop of whipped cream for added creaminess and flavor.
