Ingredients:

  • 8 oz dry linguine or spaghetti
  • 1 cup chicken broth
  • 2 tbsp dry white wine or water
  • 2 tbsp soy sauce
  • 1/8 – 1/4 cup cornstarch
  • 1/2 cup peanut butter
  • 4 boneless skinless chicken breast halves
  • 1 onion, diced
  • 1 clove garlic, minced
  • 2 tsp fresh ginger, grated
  • 2 green onions, chopped
  • 1 tbsp oil

Instructions:

  1. Cook Pasta:

    • Cook pasta according to package directions, preferably al dente (firm to the bite).
    • Drain and keep warm.
  2. Prepare Sauce:

    • In a medium mixing bowl, combine chicken broth, white wine or water, soy sauce, cornstarch, and red pepper.
    • Stir in peanut butter until smooth. Set aside.
  3. Prepare Chicken:

    • Rinse chicken breasts and pat dry with paper towels.
    • Cut into 1-inch pieces and set aside.
  4. Stir-Fry:

    • In a wok or large skillet, heat oil over medium-high heat.
    • Add diced onion, minced garlic, and grated ginger to the hot oil. Stir-fry for 2-3 minutes until onion is crisp-tender. Remove onion mixture from the wok.
  5. Cook Chicken:

    • Add the chicken pieces to the wok.
    • Stir-fry for about 3 minutes or until chicken is tender and no longer pink.
  6. Combine:

    • Push the chicken to the edges of the wok.
    • Stir the sauce and add it to the center of the wok.
    • Cook and stir until the sauce is thickened and bubbly.
    • Cook and stir for an additional 2 minutes.
  7. Final Assembly:

    • Return the onion mixture to the wok and stir to combine with the chicken and sauce.
    • Arrange the cooked pasta on individual plates or a serving platter.
    • Spoon the chicken mixture over the pasta.
    • Sprinkle with chopped green onions before serving.
