Ingredients:

For the Dough
4 tsp active dry yeast 1 cup milk
1/4 cup sugar 3 cups all-purpose flour
1 tsp salt 1 large egg
1/2 cup unsalted butter, softened 1 large egg yolk
1 tsp vanilla extract
For the Filling
4 cups poppy seeds 1/4 cup butter
1 cup sugar 1/4 cup honey
1/2 cup raisins 1/4 cup sliced almonds
1 tsp vanilla extract
Additional
1 large egg white, beaten (for egg wash)

Instructions:

  1. Prepare the Dough:
    In a large bowl, combine the yeast, sugar, and salt. Heat the milk until warm, then pour it over the yeast mixture, stirring until dissolved. Gradually whisk in 1 cup of flour until smooth. Cover the bowl and let it rise in a warm place until doubled in size, approximately 15 minutes. Once risen, stir in the egg, egg yolk, and vanilla extract.

  2. Knead the Dough:
    Gradually incorporate the remaining 2 cups of flour and softened butter into the yeast mixture, adding each alternately in small amounts. Knead the dough on a floured surface until it becomes smooth and elastic, about 15 minutes. Place the dough in a large bowl, cover it, and allow it to rise until doubled in size, approximately 1 hour.

  3. Prepare the Filling:
    While the dough is rising, simmer the poppy seeds in a medium pot of water until soft, which usually takes about 40 minutes. Drain the seeds and puree them in a food processor until smooth, about 4 minutes. Transfer the poppy seed puree back to the saucepan, then add the sugar, butter, raisins, almonds, vanilla extract, and honey. Cook the mixture over medium-low heat, stirring continuously, for about 15 minutes. Set it aside to cool.

  4. Assemble and Bake:
    Preheat your oven to 350°F (175°C). Roll out the risen dough on a floured surface into a 16″ x 12″ rectangle. In a separate bowl, whisk the egg white until stiff peaks form, then gently fold it into the cooled poppy seed filling. Spread the filling evenly over the rolled-out dough, leaving a 1″ border around the edges. Carefully fold the dough lengthwise into thirds to form a long log, ensuring the seam is well sealed. Place the assembled cake on a nonstick baking sheet, brush the top with beaten egg white, and bake it in the preheated oven until golden brown and it sounds hollow when tapped, approximately 50 minutes.
