Ingredients:

1 1/2 Tofu
1 1/4 Basmati rice
1 Onion
1 Ginger
2 Tomatoes
1 1/2 Cumin seed
1 Coriander powder
2 Turmeric powder
1 Red chili powder
1 Coriander leaves
1/4 Garam masala powder

Instructions:

  1. Begin by preparing the ingredients. Soak the basmati rice in plenty of water for half an hour. Peel and finely chop the onion and ginger. Wash and chop the tomatoes. Clean and finely chop the coriander leaves. Soak the tofu in lukewarm water for 15 minutes, then squeeze out excess water and cut into pieces.

  2. Heat oil in a thick-bottomed pan over medium heat. Add the chopped onions and sauté for about 2 minutes until they start to turn brown.

  3. Next, add the cumin seeds, coriander powder, turmeric powder, and red chili powder along with the chopped tomatoes. Continue cooking over medium heat for 3-4 minutes until the tomatoes are fully cooked and the spices are fragrant.

  4. Now, add the soaked tofu, drained basmati rice, and chopped coriander leaves to the pan. Gently stir everything together to combine.

  5. Pour in 3 cups of water and add salt to taste. Bring the mixture to a boil.

  6. Once boiling, reduce the heat to low, cover the pan, and allow the pulao to simmer until all the water has been absorbed and the rice is fully cooked, approximately 10-12 minutes.

  7. Once cooked, fluff the pulao with a fork and garnish with additional coriander leaves if desired.
