  • 2 cups red wine
  • 1 cup chicken, duck, or veal broth
  • 1 tablespoon chicken, duck, or veal glaze (very concentrated broth)
  • 2 teaspoons cornstarch dissolved in 3 teaspoons cold water (optional)
  • Fresh ground pepper to taste

Instructions:

  1. In an 8-cup glass measure, combine shallots, garlic, wine, and 1/2 cup of broth. Cook, uncovered, at 100% for 20 minutes until reduced by half.
  2. Remove from the oven and deglaze the roast cooking pan with this mixture. Cook on top of the stove until slightly thickened, and season to taste.
  3. If not deglazing, briskly stir in cornstarch slurry and cook uncovered, at 100%, for 2 minutes.
  4. Season to taste with fresh ground pepper.
