  • 1 pound green beans
  • 2 cups cabbage (or cauliflower for a twist)

  • 1 tablespoon sugar

  • 1 tablespoon fresh dill
  • 1 teaspoon dried dill
  • 1 tablespoon cornstarch
  • Salt and pepper to taste

Instructions:

Step Description
1 Wash, trim, and slice the green beans. Steam until tender yet crisp. Reserve 2/3 cup of the cooking water.
2 Cool the beans in cold water to halt the cooking process.
3 Chop the cabbage (or cauliflower) and set aside.
4 In a double boiler, melt the butter and add vinegar, sugar, miso, fresh dill, dried dill, salt, and pepper. Mix cornstarch with a little cold water (about 1 tablespoon) and add it to the mixture. Stir constantly until the sauce thickens. Gradually thin the sauce with reserved bean cooking water.
5 Add chopped cabbage (or cauliflower) to the sauce. Cook for 5 to 10 minutes, stirring frequently.
6 Add steamed green beans to the cabbage mixture. Stir well to ensure even coating of sauce on vegetables. Thin with more water if necessary.
7 Heat through and serve hot. Enjoy the comforting flavors of this nostalgic dish.
