Instructions:

  1. Prepare Brussels Sprouts: Wash the Brussels sprouts thoroughly and drain well.

  2. Cook Bacon: In a skillet, cook the diced bacon until it’s well done but not too crisp. Once cooked, remove the bacon to a paper towel, but leave the bacon fat in the pan.

  3. Saute Shallots: Add 1 tablespoon of butter to the skillet with the bacon fat and heat until sizzling. Add the shallots and sauté over low heat until they start to brown, being careful not to let them brown too much.

  4. Prepare Cheese Sauce: In a saucepan, melt 2 tablespoons of butter and add the flour. Stir for about 2 minutes to cook the flour. Slowly whisk in the milk and cook until the mixture simmers, allowing it to thicken for about 3 minutes more. Stir in the cream cheese and smoked gouda until completely melted and smooth.

  5. Toast Breadcrumbs: In a large non-stick sauté pan, melt 3 tablespoons of butter until sizzling. Add breadcrumbs and stir well to coat, toasting them slightly.

  6. Combine Ingredients: Mix the cooked bacon and shallots with the cheese sauce, then stir this mixture into the cooked Brussels sprouts until well combined.

  7. Assemble Gratin: Transfer the mixture into a shallow casserole dish, spreading it evenly.
