Ingredients:

1 Garlic cloves
3 tsp Ground cumin
2 cups Black beans
1 can Chipotle chiles
2 tbsp Adobo sauce
1 tsp Salt
4 Burrito-size flour tortillas
1/4 – 1/2 cup Sour cream
4 cups Cooked rice
1/3 cup Salsa
2 tbsp Cilantro leaves

Instructions:

  1. Prepare the Bean Mixture:

    • Heat oil in a skillet over medium heat.
    • Add the diced onion and cook for about 5 minutes, stirring occasionally, until translucent.
    • Stir in the minced garlic and ground cumin, cooking for an additional minute until fragrant.
    • Add the black beans, chipotle chiles, adobo sauce, and salt to the skillet. Stir well to combine.
    • Let the mixture simmer for about 5 minutes until heated through, ensuring it doesn’t appear dry.
  2. Assemble the Wraps:

    • Warm the flour tortillas in a microwave or skillet until soft and pliable.
    • Spread each tortilla with 1 1/2 tablespoons of sour cream, ensuring even coverage.
    • Place about 1/2 cup of cooked rice in a horizontal strip about one-third of the way up from the bottom edge of each tortilla.
    • Top the rice with one-fourth of the prepared bean mixture, spreading it evenly.
    • Spoon salsa over the bean mixture, adding a burst of flavor.
    • Sprinkle cilantro leaves over the salsa, adding freshness and color.
  3. Roll Up the Wraps:

    • Fold in the two sides of the tortilla towards the center.
    • Begin rolling the tortilla away from you, keeping it tight and compact (burrito-style).
    • Repeat the process with the remaining ingredients until all wraps are assembled.
