Yield:

About 60 cookies

Instructions:

  1. In a large bowl, combine molasses, dark corn syrup, brown sugar, and butter. Beat until the mixture is smooth and well blended.

  2. Add the margarine, heavy cream, ginger, cinnamon, flour, baking powder, and a pinch of salt to the bowl. Continue beating until a stiff dough forms.

  3. Chill the dough in the refrigerator for about 20 minutes to firm it up.

  4. Preheat your oven to 375ยฐF (190ยฐC).

  5. On a lightly floured surface, roll out small portions of the chilled dough to a thickness of about 1/4 inch.

  6. Using a cookie cutter, cut the dough into 3-inch rounds or any preferred shapes. Re-roll the scraps of dough and continue cutting until it’s all used.

  7. Place the cut-out cookies onto parchment-lined baking sheets, leaving some space between each cookie.

  8. Bake in the preheated oven for 8 to 10 minutes, or until the edges are lightly golden. Be cautious not to overbake as these cookies can easily become too crisp.

  9. Once baked, remove the cookies from the oven and allow them to cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.
