Welcome to my first recipe post, where I’m sharing with you a delightful dish called Chilekeesh! Adapted from a recipe I stumbled upon in the L.A. Times back in 1978, this dish has evolved over time to become a favorite among my friends and colleagues. Originally calling for canned diced green chiles and Monterey Jack Cheese, I’ve tweaked it to incorporate fresh chiles and cheddar, resulting in a burst of flavor that’s hard to resist. Perfect for brunch or a light dinner, this dish pairs wonderfully with salsa and sour cream, making it a hit at any potluck gathering.

Ingredients:

  • 1/4 cup butter
  • 5 eggs
  • 1/4 cup flour
  • 1/2 teaspoon baking powder
  • 2-3 jalapeno chiles, diced
  • 1 cup cottage cheese
  • 8 ounces sharp cheddar cheese, grated

Instructions:

  1. Preheat Oven: Begin by preheating your oven to 350°F (175°C).

  2. Prepare Pan: In an 8-inch square baking pan, place the butter and melt it in the oven, ensuring to tilt the pan to coat the sides with the melted butter.

  3. Beat Eggs: Meanwhile, in a mixing bowl, beat the eggs until they are well combined.

  4. Combine Ingredients: To the beaten eggs, add the flour, baking powder, melted butter from the pan, diced jalapeno chiles, cottage cheese, and grated cheddar cheese. Mix everything together until well incorporated.

  5. Bake: Pour the mixture into the prepared baking pan, spreading it evenly. Place the pan in the preheated oven and bake for about 35 minutes, or until the top is golden brown and the edges are slightly crispy.

  6. Serve: Once done, remove the Chilekeesh from the oven and allow it to cool for a few minutes. Slice it into squares and serve warm. Optionally, garnish with additional diced chiles, salsa, and a dollop of sour cream for extra flavor.
