Instructions

1 Begin by cutting the tripe into 1-inch pieces.
2 In a Dutch oven, combine the tripe, veal knuckle, water, onions, garlic, salt, dried oregano, 1/4 teaspoon crushed red pepper flakes, and black pepper.
3 Cover and simmer over low heat for approximately 3 hours, or until the tripe becomes clear and jelly-like in appearance and the veal knuckle is tender.
4 Remove the veal knuckle from the pot. Once it’s cool enough to handle, discard the bones, chop the meat, and return it to the pot.
5 Add the hominy (undrained) to the pot.
6 Cover and simmer for an additional 20 minutes.
7 Serve the menudo hot, garnished with dried chile pequins or crushed red pepper flakes to taste.
8 Accompany each serving with a lime wedge for a burst of citrus flavor.
