Ingredients:

Quantity Ingredient
2 Hard-boiled eggs
1/4 cup Sugar
1/4 cup Cider vinegar
2 tbsp Prepared mustard
1/2 tsp Salt
2 tbsp Butter or margarine
2 tbsp Milk
2 tbsp Mayonnaise
2 Celery stalks, diced
4 Green onions, chopped
1 1/2 cups Cooked chicken, diced

Instructions:

  1. In a small saucepan, whisk together egg yolks, sugar, cider vinegar, mustard, and salt.
  2. Cook over low heat, stirring constantly, until the mixture thickens.
  3. Stir in butter until melted, then cover and chill for 30 minutes.
  4. After chilling, add milk and mayonnaise to the mixture and mix well.
  5. In a large bowl, combine the diced celery, chopped green onions, and cooked chicken.
  6. Add the prepared dressing to the bowl and mix until all ingredients are evenly coated.
  7. Chill the chicken salad until ready to serve.
