Cranberry Roast Pork 🍖

Ingredients:

  • 4 lbs pork roast
  • 1 cup whole berry cranberry sauce
  • 1 yellow onion, diced
  • 1 tsp cinnamon
  • 1/4 tsp ginger
  • Salt and pepper, to taste

Instructions:

  1. Preheat and Prepare:

    • Preheat your oven to 325°F (165°C).
    • Season the pork roast with salt and pepper, rubbing it all over for even flavor.
  2. Roast the Pork:

    • Place the seasoned roast on a roasting rack set in a pan to catch drippings.
    • Roast in the preheated oven for 2 1/2 to 3 hours, or until the internal temperature reaches 175°F (80°C) when measured with a meat thermometer.
  3. Make the Cranberry Glaze:

    • While the pork is roasting, prepare the cranberry glaze.
    • In a saucepan, combine the whole berry cranberry sauce, diced yellow onion, cinnamon, and ginger.
    • Bring the mixture to a gentle boil, then remove it from heat.
  4. Baste and Serve:

    • About halfway through the roasting time, begin basting the pork with the cranberry glaze at regular intervals.
    • Reserve some of the cranberry mixture to serve alongside the thinly sliced pork.
