  • Prep Time: 24 hours
  • Cook Time: 20 minutes
  • Total Time: 24 hours 20 minutes
  • Servings: 4

Ingredients:

Quantity Ingredient
1 1/2 – 2 Venison chops
2 Butter
1/2 Margarine
2 Marjoram
1 Fresh mushrooms
1/4 Port wine
1 Sour cream
Salt and pepper

Instructions:

  1. Marinate the Venison:

    • If your venison is on the tougher side, consider marinating it overnight in port wine or a good red wine. This helps tenderize the meat and infuses it with delicious flavor. Place the chops in a container and cover them with the wine. Refrigerate for 24 hours.
  2. Prepare the Mushroom Sauce:

    • In a small frying pan over medium heat, melt 1 tablespoon of butter. Add the fresh mushrooms and sauté them for about 5 minutes until they’re tender and golden brown.

    • Pour in the port wine and increase the heat to high. Let it cook for 2 minutes to allow the alcohol to evaporate and the flavors to meld.

    • Reduce the heat to low and stir in the sour cream until it’s well combined with the mushroom mixture. Season with salt and pepper to taste. Set the sauce aside.

  3. Cook the Venison Chops:

    • In a large, heavy frying pan (cast iron works best), heat 1 tablespoon of butter over medium-high heat. Sprinkle marjoram on each side of the venison chops for extra flavor.

    • Carefully add the venison chops to the pan and cook them for approximately 5 minutes on each side, or until they reach your desired level of doneness. For medium-rare, aim for an internal temperature of 130°F (54°C).

  4. Keep Warm:

    • Once the chops are cooked to your liking, transfer them to a heated platter and place the platter in a warm oven set to 150°F (65°C) to keep them warm while you prepare the sauce.
  5. Deglaze and Finish:

    • Pour the prepared mushroom sauce into the same frying pan you used to cook the chops. Use a spatula to scrape up any browned bits from the bottom of the pan; these are full of flavor!

    • Allow the sauce to simmer for a few minutes, allowing it to thicken slightly and absorb all the delicious flavors from the pan.

  6. Serve:

    • Once the sauce is heated through and well combined, spoon it generously over the venison chops. Garnish with fresh herbs if desired, and serve immediately.

These Venison Chops with Mushroom Sauce are best enjoyed hot and fresh, straight from the pan to the plate. Pair them with your favorite side dishes, such as roasted vegetables or creamy mashed potatoes, for a hearty and satisfying meal that’s perfect for any occasion. Enjoy the rustic flavors of the wild with this delightful recipe! 🌿🍽️
