Instructions:

Preheat Oven: Preheat your oven to 350Β°F (175Β°C).

- In a large mixing bowl, beat the eggs until light and fluffy.
- Add in the softened butter, almond extract, and flour. Mix until well combined.
- Stir in the sugar and baking powder until the batter is smooth.

- Divide the batter evenly into 3 separate bowls.

- Repeat the flipping process onto the red layer and spread the remaining preserves on the yellow layer.

- In a double boiler, melt the dark chocolate until smooth.
- Spread a generous layer of melted chocolate evenly over the top green layer.

- Once the chocolate has hardened, remove the pan from the fridge.
- Carefully flip the pan onto a hard surface to release the layered cookie.
- Spread the remaining melted chocolate over the top and sides of the cookie.
