Ingredients

1 Pie crust
8 Fresh peaches
2/3 cup Almonds
3 Eggs
1/2 tsp Vanilla extract
1/4 tsp Salt
3 tbsp Butter
4 tbsp Sugar

Instructions

  1. Preheat the Oven to 375Β°F (190Β°C).

  2. Prepare Pie Crust: Prick the bottom of the pie crust with a fork. 🍴

    • Bake in the preheated oven until lightly browned, about 15-20 minutes.
  3. Prepare Almond Mixture:

    • In a blender or food processor, grind almonds and 2 tablespoons of sugar until fine. 🌰
    • Add eggs, almond extract, vanilla extract, and salt.
    • Process until you have a thick, wet paste.
    • Blend in 2 tablespoons of butter until well combined.
  4. Assemble the Pie:

    • Cut the fresh peaches in half and remove the pits.
    • Place the peach halves cut-side down on top of the almond mixture in the pie crust.
