Directions:

1 Line the base of a deep 22cm round cake tin with baking paper.
2 Allow half of the sorbet to soften slightly, then spread it evenly into the base of the prepared cake tin.
3 Place the tin in the freezer until the sorbet layer is firm.
4 Allow half of the vanilla ice cream to soften, then spread it in an even layer over the firm sorbet.
5 Return the tin to the freezer until the ice cream layer is firm.
6 Repeat the layering process with another layer of sorbet, followed by another layer of vanilla ice cream.
7 Freeze the cake until it is completely firm.
8 The cake can be made up to a week ahead of time. Store it wrapped in cling wrap in the freezer.
9 When ready to serve, run a warm, damp cloth around the outside of the cake tin to loosen the cake.
10 Invert the cake onto a serving plate.
11 Decorate the cake to your liking, the flavor combinations are virtually limitless!
