Ingredients:

  • 18 red chili peppers
  • 18 green chili peppers
  • 4 onions
  • 1 tablespoon canning salt
  • 2 1/2 cups cider vinegar
  • 3/4 – 1 cup sugar
  • Boiling water (as needed)

Instructions:

Step Description
1 Put peppers and onions through a food chopper, or chop in water in a blender and drain thoroughly.
2 Place the chopped peppers and onions in a 6-quart kettle.
3 Add canning salt to the pepper and onion mixture, then cover with boiling water. Let it stand for 10 minutes.
4 Drain and discard the liquid from the peppers and onions.
5 Add cider vinegar and sugar to the drained peppers and onions.
6 Bring the mixture to a boil, then reduce the heat and simmer for 20 minutes, allowing the flavors to meld together beautifully.
7 Ladle the hot pepper relish into 7 pint jars, ensuring to press down gently as you pack to ensure the liquid covers the peppers and onions completely.
8 Wipe the rims of the jars clean, then adjust the lids securely.
9 Process the filled jars in a boiling water bath for 15 minutes. Remember to start counting the processing time when the water in the canner returns to a vigorous boil.
10 Carefully remove the jars from the canner and allow them to cool before storing them in a cool, dark place.
