Ingredients:

  • 1 cup whole wheat flour
  • 2 cups cooked red kidney beans

  • 1/2 cup fresh mint leaves, chopped
  • 8-10 sprigs of fresh cilantro, chopped

Instructions:

1 In a large mixing bowl, combine the whole wheat flour, cooked red kidney beans, salt, finely chopped green chilies, chopped onion, pomegranate seeds, chopped mint leaves, chopped cilantro, and red chili powder. Mix well to combine all the ingredients thoroughly.
2 Knead the mixture into a soft dough, adding a little water if needed. Once the dough comes together, cover it with a moist cloth and let it rest for 15 minutes. This resting time allows the flavors to meld and the dough to become more pliable.
3 After 15 minutes, divide the dough into 8-10 equal portions and roll them into smooth balls (pedas).
4 Heat a griddle or tawa over medium heat. Meanwhile, take one portion of the dough and roll it out into a 5-6 inch diameter disc, using a rolling pin and a dusting of flour to prevent sticking.
5 Place the rolled-out dough disc onto the hot griddle and cook for a minute or until small bubbles start to appear on the surface. Flip the paratha and cook the other side until light golden brown spots start to form.
6 Increase the heat to medium-high and lightly brush the cooked side of the paratha with oil using a brush or spoon. Press down gently with a spatula and cook for another minute, or until both sides are evenly golden brown and crispy. Repeat the same process for the remaining dough portions.
