I created this Beer Battered Lobster Medallions recipe myself after being inspired by a similar dish I saw on a supper club menu. It has been an absolute hit every time I’ve served it! ๐ŸŽ‰

Ingredients:

Amount Ingredient
1 Lobster tail
1 Box of Bisquick
1/2 Cup cornstarch
1/2 Tsp garlic powder
1/2 Tsp onion powder
1/2 Tsp cayenne pepper
8 oz Beer
1 Egg
1 Tbsp butter

Instructions:

  1. Prepare Beer Batter:

    • “The longer it sits, the better it gits!”
    • Mix dry ingredients in a bowl and set aside.
  2. Mix Wet Ingredients:

    • In another bowl, mix liquids (including egg).
    • Add wet mixture to dry ingredients and mix until no longer lumpy.
  3. Prepare Lobster Tails:

    • While the batter rests on the kitchen counter (no need for refrigeration), shell the lobster tails.
    • This is easiest when the tails are partially frozen.
    • Use heavy-duty kitchen scissors to cut from the thick end over the top hump of the shell.
  4. Slice into Medallions:

    • Slice the tails into 1/2 inch thick medallions.
    • Drain them on paper towels.
  5. Heat Oil for Frying:

    • Heat 2 inches of frying oil in a deep fryer.
    • When the oil is hot, drop the battered medallions into the oil in a single layer.
    • Cook in batches to prevent sticking together.
  6. Drain and Keep Warm:

    • Once cooked, drain the medallions on a paper grocery bag lined with paper towels.
    • Keep batches warm in a medium-high oven while cooking the remaining medallions.
  7. Serve Hot:
