Frozen Pumpkin Squares Recipe
π Description: These Frozen Pumpkin Squares are an irresistible dessert that’s not only delicious but also incredibly easy to make (no bake required!). Ingredients:
- 1 cup walnuts, finely chopped
- 1/4 cup butter, melted
- 1/4 cup margarine, melted
- 1 1/4 cups milk
- 2 packages instant vanilla pudding mix
- 1 cup canned pumpkin
- 1 teaspoon pumpkin pie spice
- 2 1/4 cups Cool Whip, thawed
Instructions:
- In a small bowl, mix together the crushed crumbs, finely chopped walnuts, melted butter, and melted margarine until well combined.
- Reserve 2 tablespoons of the mixture for garnish, and press the remaining mixture onto the bottom of a foil-lined 8-inch square pan. Refrigerate while preparing the filling.
- In a large bowl, pour in the milk. Add the instant vanilla pudding mixes, canned pumpkin, and pumpkin pie spice.
- Using a wire whisk, beat the mixture for about 2 minutes or until well blended.
- Gently fold in 2 1/4 cups of the thawed Cool Whip until fully incorporated.
- Spread the pumpkin filling evenly over the prepared crust in the pan.
- Place the pan in the freezer and let it freeze for at least 4 hours or until firm.
- Once frozen, remove the pan from the freezer and let it stand at room temperature for about 10 minutes, or until the dessert can be easily cut into squares.
- Cut the frozen dessert into squares and garnish each square with a dollop of the remaining thawed Cool Whip.
- Sprinkle the reserved crumb mixture over the top for an added crunchy texture.
- For easy snacking, individually wrap the frozen squares and store them in the freezer. Take out as desired for quick and delightful treats!
