Recipe Instructions:

  1. Prepare Brine:

    • Place the turkey in a bucket or large non-aluminum pasta pot big enough so that it can be submerged in liquid.
    • Dissolve kosher salt and brown sugar in the chicken stock, apple juice, and white wine.
    • Add bay leaf, dried rosemary leaves, dried sage, dried leaf thyme, and dried leaf basil to the mixture.
    • Pour the brine over the turkey.
    • Add cold water until the turkey is completely submerged under the liquid.
  2. Brine the Turkey:

    • If the bucket has a lid, cover it; otherwise, use plastic wrap to cover.
    • Place the turkey in the fridge for at least 24 hours prior to roasting to allow it to brine properly.
  3. Preheat and Prepare Turkey:

    • When ready to roast, remove the turkey from the brine.
    • Discard the brine; do not use it to make gravy.
    • Pat the turkey dry with paper towels.
    • Stuff the turkey if desired.
    • Brush the turkey with oil or melted butter and season with seasoning salt.
  4. Roast the Turkey:

    • Roast the turkey in the usual manner until it reaches the desired internal temperature.
  5. Make Gravy:

    • Boil up the turkey neck and make gravy from the stock.
