Recipe Instructions:

Prepare Brine:
- Place the turkey in a bucket or large non-aluminum pasta pot big enough so that it can be submerged in liquid.
- Dissolve kosher salt and brown sugar in the chicken stock, apple juice, and white wine.
- Add bay leaf, dried rosemary leaves, dried sage, dried leaf thyme, and dried leaf basil to the mixture.
- Pour the brine over the turkey.
- Add cold water until the turkey is completely submerged under the liquid.

Brine the Turkey:
- If the bucket has a lid, cover it; otherwise, use plastic wrap to cover.
- Place the turkey in the fridge for at least 24 hours prior to roasting to allow it to brine properly.

Preheat and Prepare Turkey:
- When ready to roast, remove the turkey from the brine.
- Discard the brine; do not use it to make gravy.
- Pat the turkey dry with paper towels.
- Stuff the turkey if desired.
- Brush the turkey with oil or melted butter and season with seasoning salt.

Roast the Turkey:
- Roast the turkey in the usual manner until it reaches the desired internal temperature.

- Boil up the turkey neck and make gravy from the stock.
