Turkey Sandwich Recipe

Turkey breast (sliced) 4 slices

Egg yolk 1

Lemon juice ½ lemon
Beefsteak tomatoes (sliced) 1
Swiss chard (chopped) 200g

Extra virgin olive oil To taste

Instructions:

  1. Prepare the Apple:
    Begin by rinsing and drying the green apple. Remove the core and cut it into thin slices. Coat the slices with lemon juice to prevent them from browning. Set aside.

  2. Prepare the Tomato:
    Wash the beefsteak tomato, dry it, and slice it thinly. Set aside for later use.

  3. Sauté the Swiss Chard:
    Rinse the Swiss chard thoroughly and drain it. In a pan, heat a little olive oil and sauté the garlic until fragrant. Once the garlic has imparted its flavor, remove it from the pan. Add the chard to the pan and sauté it for just a few minutes on high heat until it wilts, then turn off the heat.

  4. Prepare the Garlic Mayonnaise Sauce:
    In a mortar, crush the 3 garlic cloves until smooth. In a bowl, whisk together the egg yolk, a pinch of salt, and a few drops of lemon juice. Once the mixture thickens, slowly add the garlic paste and the remaining lemon juice. Continue whisking until the mayonnaise reaches a smooth consistency.

  5. Grill the Turkey Breast:
    Heat a grill pan and add a drizzle of olive oil, salt, and black pepper to season. Grill the turkey breast slices until they are golden and slightly crispy on the edges, turning to cook both sides.

  6. Toast the Bread:
    In a separate pan, lightly toast the whole grain multigrain bread slices until golden brown and crispy on the edges.

  7. Assemble the Sandwich:
    Start with one slice of toasted bread and spread a generous amount of garlic mayonnaise. Layer the sautéed Swiss chard, followed by the tomato slices and turkey breast. For the second layer, add the apple slices, a few more tomato slices, and the Swiss chard. Finally, top with the second slice of toasted bread spread with the remaining mayonnaise.

  8. Serve:
    Cut the sandwich into halves or quarters and serve immediately while fresh and warm.
