Instructions

  1. Prepare the Chocolate Sauce:

    • Start by making the chocolate base for your iced mocha. In a small bowl, combine the granulated sugar with the unsweetened cocoa powder, ensuring it’s sifted to avoid lumps.
    • Pour 170 ml of cold whole milk into a saucepan and add the cocoa and sugar mixture. Stir everything together until it’s smooth and fully combined.
    • Place the saucepan over medium heat and bring it to a simmer. Once it starts to bubble, reduce the heat and let it simmer for 10 minutes. This allows the cocoa mixture to thicken slightly.
    • Once the chocolate is ready, remove from heat and let it cool for a few minutes. Then cover the mixture with plastic wrap, placing it directly on the surface to prevent a skin from forming, and refrigerate for at least 2 hours. This will help the chocolate sauce thicken and cool completely.
  2. Prepare the Coffee:

    • While the chocolate is chilling, make your coffee. Using a moka pot, fill the bottom chamber with cold water up to the safety valve. Add your ground coffee to the filter basket without pressing it down.
    • Assemble the moka pot, ensuring it’s tightly sealed, and place it on the stove over medium heat. Once the coffee starts to brew, reduce the heat and allow it to brew until all the liquid has filtered through. Set aside to cool.
  3. Prepare the Whipped Cream:

    • In a large mixing bowl, pour the cold fresh cream (it’s important that the cream is very cold to whip properly).
    • Add the powdered sugar (to taste) and beat the cream until soft peaks form. This should take about 3-5 minutes with an electric mixer on medium-high speed. Set aside for later use.
  4. Assemble the Iced Mocha:

    • For each serving, fill a tall glass with 6-7 ice cubes.
    • Pour 50 ml of the cooled chocolate sauce into each glass, followed by 50 ml of the freshly brewed coffee.
