Recipe: Puff Pastry-Wrapped Apricots

Puff Pastry 230g
Scamorza Cheese (or Provola) 30g
Egg Yolk 1
Whole Milk 10g
Flax Seeds 1 tsp
Pink Peppercorns 1 tsp

Instructions:

To prepare these delicious Puff Pastry-Wrapped Apricots, start by cutting the scamorza cheese into small cubes. Then, wash and carefully dry the apricots, cutting them in half. Using a round cutter, cut out 6 disks from the puff pastry dough, each about 10 cm in diameter. If you don’t have a cutter, you can also use a glass or any round object.

Place half an apricot in the center of each puff pastry disk, ensuring the rounded side is facing downward. Fill the hollow center of each apricot half with the cubed scamorza cheese, then place the other half of the apricot on top.

Next, fold the edges of the puff pastry around the apricot, pinching the dough together to fully encase the fruit, creating a neat bundle. Carefully place the wrapped apricots on a baking sheet lined with parchment paper.

To give the pastry a beautiful golden finish, whisk the egg yolk with the milk and brush the mixture over the top of each pastry bundle. Create small holes at the top using the tines of a fork, allowing steam to escape during baking.

In a small bowl, combine the flax seeds and pink peppercorns. Sprinkle this mixture over the top of the pastries for an extra burst of flavor and a touch of color.

Now, your Puff Pastry-Wrapped Apricots are ready to bake. Place them in a preheated oven at 180°C (350°F) and bake for about 20-25 minutes, or until the pastry is golden brown and puffed.
