Cherry and Chocolate Sbrisoline (Italian Crumbly Sweets)

Butter (cold, cubed) 100g

Flaky sea salt 1 tsp

Cherry jam 50g

Instructions:

  1. Prepare the Cherries:
    Start by washing the cherries thoroughly. Once cleaned, remove the pits using a cherry pitter, or alternatively, slice the cherries in half and remove the pits manually.

  2. Make the Dough:
    In a large mixing bowl, combine the all-purpose flour, almond flour, and cornmeal. Add the sugar, flaky sea salt, and ground cardamom to the dry ingredients. Mix them well.
    Add the cold butter, cubed, into the flour mixture. Use your fingertips or a pastry cutter to work the butter into the flour until the mixture resembles coarse crumbs.
    Add the egg yolks and continue to mix until the dough comes together.

  3. Prepare the Molds:
    Grease 6 small round tartlet molds (approximately 10 cm in diameter) with butter.

  4. Fill the Molds:
    Divide the dough evenly into the 6 molds, pressing it gently into the base to form a crumbly crust.

  5. Add the Fillings:
    Scatter the prepared cherries over the dough, pressing them down slightly into the surface. Roughly chop the dark chocolate and sprinkle it on top of the cherries.

  6. Top with Cherry Jam:
    Spoon a small dollop of cherry jam onto each tartlet, spreading it gently to cover the top.

  7. Bake:
    Preheat your oven to 180°C (350°F). Place the molds on a baking sheet and bake for about 20-25 minutes or until the edges are golden brown and the center is slightly firm.

  8. Cool and Serve:
    Once baked, remove the sbrisoline from the oven and allow them to cool in the molds for a few minutes before transferring them to a wire rack to cool completely. Enjoy these delightful cherry and chocolate treats with a warm beverage or as a sweet finish to any meal!
