Blanched Almonds 50g
All-Purpose Flour 250g

Instructions:

  1. Prepare the Ingredients:
    Start by preheating your oven to 170°C (340°F) with the fan off. Place paper muffin cups into a muffin tray.

  2. Mixing the Dry Ingredients:
    In the bowl of a food processor, combine the all-purpose flour, shelled hazelnuts, blanched almonds, and brown sugar. Pulse until the mixture is well combined and the nuts are finely ground.

  3. Add the Wet Ingredients:
    Add the butter (cut into small pieces), eggs, and lemon zest to the dry mixture. Pulse again until all the ingredients are thoroughly incorporated into a smooth batter.

  4. Portion the Batter:
    Using a spoon, divide the muffin batter evenly into the muffin cups, filling each one up to two-thirds of its capacity. You should use around 65g of batter for each muffin cup.

  5. Bake:
    Place the tray in the preheated oven and bake at 170°C (340°F) for about 25 minutes, or until the muffins are golden and a toothpick inserted into the center comes out clean.

  6. Cool and Serve:
