Ingredients:

  • 1 whole chicken
  • 1 cup unsalted butter
  • 2 onions, finely chopped
  • 1 teaspoon salt
  • 3/4 cup flour
  • 2 tablespoons curry powder
  • 1/2 cup ginger, minced
  • Freshly ground black pepper, to taste

Instructions:

  1. Prep the Chicken: The day before, immerse the whole chicken in a large saucepan. Cover it with water, bring to a boil, then reduce the heat and simmer for about an hour or until the chicken begins to fall off the bones.

  4. Saute the Base: In a saucepan over medium-high heat, melt butter and sauté the finely chopped onions until soft. Add a teaspoon of salt.

  5. Create the Curry Paste: Introduce extra butter if needed. Add flour, curry powder, minced ginger, and a generous sprinkle of black pepper (about 1/2 teaspoon). Mix until it forms a thick paste, ensuring a lump-free consistency.

  6. Gradual Sauce Thickening: Slowly add the chilled chicken stock, one cup at a time, stirring vigorously to create a smooth paste. Bring the mixture to a boil after each addition. Continue this process until the sauce reaches your desired thickness (a slightly thick consistency is recommended).
