- 1 cup fine rolled oats
- 3/4 cup brown sugar
- 2 tsp mixed spice
- 2 tsp cinnamon

- 1/2 tsp baking soda

- 75g butter
- 1 egg
- 1 cup raw chopped or grated apple
- 3/4 – 1 cup milk (plus extra as needed)

Begin by placing all the dry ingredients (self-raising flour, rolled oats, brown sugar, mixed spice, cinnamon, clove, baking soda, and salt) into a large bowl. Mix thoroughly with your fingers to ensure the oats and brown sugar are evenly distributed.

In a separate container, melt 75g of butter. Add the egg and 3/4 cup of milk. Beat the mixture with a fork until well combined.

Grate or chop the apple using a food processor. Press it into a cup, removing air bubbles, then stir it into the liquid mixture. Work quickly to prevent the apple from browning.

Add the apple and liquid mixture to the dry ingredients. Mix lightly to dampen the ingredients, incorporating additional milk as needed.

Coat 12 medium-sized muffin pans with non-stick spray. Divide the batter evenly among the pans.
