Ingredients:

Quantity Ingredient
1 cup Sugar
1/2 cup Sweet Butter
2 tbsp Pernod
1 1/2 tbsp Bourbon
2 tsp Anise Seeds
3 Eggs
1 cup Flour
2 1/4 tsp Baking Powder
1 1/2 tbsp Shortening
1 1/2 cups Nuts (of your choice)
12 Chocolate Chips

Instructions:

  1. In a large mixing bowl, stir together the sugar and melted butter until well combined.
  2. Add the Pernod, bourbon, and anise seeds to the mixture.
  3. Beat in the eggs one at a time, then stir in the nuts.
  4. Sift the flour and baking powder together and gently stir into the wet ingredients until well incorporated.
  5. Cover the dough with plastic wrap and chill in the refrigerator for about three hours.
  6. Preheat the oven to 375°F and butter two cookie sheets.
  7. Shape the chilled dough into three loaves on the cookie sheets, ensuring they are well spaced. Each loaf should be approximately two inches wide and 1/2″ thick.
  8. Bake for about 20 minutes or until the loaves puff up and turn golden brown.
  9. Once the loaves are cool enough to touch, cut each loaf into diagonal slices about 1/2″ thick.
  10. Lay the slices on their cut sides and toast them at 375°F for an additional 15 minutes or until lightly browned.
  11. Allow the biscotti to cool completely.
  12. In a double boiler, melt the chocolate chips with the shortening, stirring frequently. Remove from heat and let it cool until a candy thermometer reads 85°F.
  13. Holding each biscotti by its bottom, dip the tops into the melted chocolate. Turn immediately and allow them to dry, uncoated side down, on wax paper.
  14. Repeat the process until all biscotti are coated in chocolate.
