2 Chorizo sausages, sliced
12 oz Yellow onions, finely chopped
3/4 cup Green pepper, diced
2 cups Rice
3 cups Hot chicken broth
4 Tomatoes, diced
1/2 – 1 tsp Powdered saffron
1/2 tsp Coriander
12 Scallops
2 dozen Clams
1 dozen Mussels
2 Pimientos, sliced

Instructions:

  1. Marinating the Meats:

    • In a bowl, combine olive oil, oregano, dry basil, minced garlic, salt, and pepper.
    • Place diced chicken and peeled shrimp in another bowl; pour the marinade over them.
    • Cover and refrigerate overnight to let the flavors infuse.
  2. Cooking the Chicken and Sausage:

    • Heat about 1 tablespoon of the marinade in a large frypan over medium heat.
    • Remove the chicken from the marinade, drain, and add to the pan. Cook until lightly browned.
    • Set the chicken aside. Add sliced sausage to the pan and cook until well browned.
  3. Sautéing Vegetables and Rice:

    • Add chopped onions and diced green pepper to the pan; raise the heat to medium-high and cook until the vegetables are soft.
    • Stir in the rice, allowing it to brown slightly.
  4. Creating the Flavorful Base:

    • Add hot chicken broth, diced tomatoes, powdered saffron, coriander, cooked chicken, and sausage to the pan.
    • Bring the mixture to a boil, then cover and simmer for 25 minutes, stirring occasionally until the rice is tender.

    • Add peas and scallops to the simmering paella, tossing gently to incorporate the flavors.
  6. Baking to Perfection:

    • Transfer the paella to a large ovenproof 6-quart baking dish or a traditional paella pan.
    • Drain the marinated shrimp and push them into the rice mixture along with the clams.
    • Bake, covered, in a preheated 350-degree oven for 15 to 20 minutes, or until the shrimp are pink, and the clams have opened.
  7. Garnishing and Serving:

    • Once out of the oven, garnish your paella with strips of pimientos for an extra burst of color and flavor.
