Kalsbrust Mit Krauterfullung (Veal Breast / Herb Stuffing)

Ingredients:

  • 3 slices of bacon
  • 1 onion
  • 4 mushroom pieces
  • 1/4 cup fresh parsley
  • 1 dill sprig
  • 1 tarragon leaf
  • 1 basil leaf
  • 1/2 pound ground beef
  • 2 eggs
  • 1/2 cup sour cream
  • Salt and pepper to taste
  • 1/4 cup bread crumbs
  • 3 cups beef broth
  • 1/2 tablespoon cornstarch

Instructions:

1. Stuffing:

a. Dice bacon and onion.

b. Cook bacon in a frypan until partially cooked; add onion and cook for 5 minutes.

c. Drain and chop mushrooms, add to frypan and cook for another 5 minutes.

d. Remove the mixture from heat, let it cool, and transfer to a mixing bowl.

e. Add fresh parsley, dill, tarragon, basil, ground beef, bread crumbs, eggs, and sour cream.

f. Mix thoroughly and season with salt and pepper.

2. Veal:

a. With a sharp knife, cut a pocket in the veal breast or leg.

b. Fill the pocket with the prepared stuffing and close the opening with toothpicks. (Tie with string if necessary.) Rub the outside with salt and pepper.

c. Heat oil in a Dutch oven.

d. Place the meat in the pan and bake in a preheated 350-degree F. oven for about 1 1/2 hours.

e. Baste occasionally with beef broth.

f. When done, place the meat on a preheated platter.

g. Pour the rest of the beef broth into the Dutch oven and scrape brown particles from the bottom.

h. Bring pan drippings to a simmer.

i. Thoroughly blend cornstarch with sour cream and add to pan drippings while stirring. Cook and stir until thick and bubbly.

j. Slice the veal breast and serve the sauce separately.
