Ingredients:

  • 5 baking potatoes
  • 1/4 cup butter
  • 1/2 cup heavy cream
  • Salt, to taste
  • 5 organic domestic mushrooms

Instructions:

Step Description
1 Peel potatoes and dice them into equal pieces.
2 Place the diced potatoes in a pot with cold water, ensuring they are covered by at least two inches of water.
3 Boil the potatoes until they are tender. Be mindful not to overcook them; the water should remain clear and not become cloudy.
4 Drain the cooked potatoes and transfer them to a mixing bowl.
5 Add the sliced butter to the potatoes and allow it to melt.
6 Warm the heavy cream slowly in the same pot used to cook the potatoes.
7 Whip the potatoes and butter until they are smooth or reach your desired consistency.
8 Slowly incorporate the warm heavy cream into the mashed potatoes while continuing to whip.
9 Season the mashed potatoes with salt to taste.
10 In a large sauté pan, heat pure olive oil over high heat.
11 Once the oil begins to ripple, add the sliced organic mushrooms to the pan.
12 Allow the mushrooms to brown on one side without moving them, then turn them over to brown on the other side.
13 Reduce the heat to low and add the sliced garlic and red pepper flakes to the pan.
14 Once the garlic is lightly golden, drain any excess oil from the pan.
15 Dust the pan with flour and whisk it into the remaining oil to create a roux.
16 Slowly add milk to the roux while whisking continuously until the gravy reaches your desired consistency.
17 Season the mushroom gravy with salt to taste.
18 If the gravy is too thick, adjust the consistency by adding more milk. If it’s too thin, continue to reduce it over low heat until it thickens.
