Instructions:

  1. Prepare Lentils:

    • Let the lentils reduce until there is about 4 cups of liquid leftover.

    • Transfer the toasted nuts to a blender.
    • Add the garlic, salt, and jalapeno pepper (if using) to the blender.
    • Gradually add the reserved lentil cooking liquid (which should be dark brown) and puree the mixture until smooth.
    • Pour the mixture into a bowl and stir in chopped green onions and cilantro.
  3. Prepare Lentil Mixture:

    • In a separate skillet, sautรฉ the chopped yellow onion in vegetable oil until golden.
    • Add the cooked lentils to the skillet and sautรฉ for another 15 minutes, allowing the flavors to meld.
    • Cover the skillet over very low heat and let the lentil mixture marinate.
  4. Cook Basmati Rice:

    • While the lentil mixture is marinating, cook the basmati rice according to package instructions.
  5. Assemble and Simmer:

    • In a large pot, layer the cooked basmati rice and the lentil mixture.
    • Let the dish simmer over very low heat for about 1 hour, allowing the flavors to develop. You can place a dishtowel under the lid to trap steam and ensure even cooking.

    • Drizzle additional nut sauce over individual servings as desired.
