Instructions:

  1. Prepare the Mixture:

    • In a heavy, 3-quart saucepan, combine the sugar, evaporated milk, butter, and corn syrup.
    • Cook the mixture over low heat, stirring constantly with a wooden spoon, until the sugar dissolves and the mixture comes to a boil.
    • Add the dates to the mixture and continue cooking, stirring occasionally, until a candy thermometer registers 238ยฐF degrees, or until a small amount in cold water forms a soft ball.
  2. Finalize the Mixture:

    • Remove the mixture from heat.
    • Add the pecans, walnuts, and vanilla extract.
    • Beat the mixture until it thickens.
  3. Shape and Refrigerate:

    • Turn the mixture out onto a board and divide it in half.
    • Shape each half into a roll approximately 1 3/4 inches in diameter.
    • Wrap each roll in waxed paper and refrigerate for at least 1 hour before proceeding.
  4. Coat with Chocolate:

    • In the top of a double boiler, melt the chocolate pieces over hot, but not boiling, water.
    • Remove the melted chocolate from heat.
    • Take the date rolls out from the refrigerator and spread half of the melted chocolate over each roll, ensuring an even coating.
  5. Chill and Slice:

    • Refrigerate the date rolls until the chocolate hardens.
    • Once the chocolate is firm, remove the rolls from the refrigerator and wrap them again in waxed paper.
    • When ready to serve, slice the rolls into 1/3-inch thick slices.
