Ingredients:

  • 40-50 Swiss chard leaves
  • 1 cup rice
  • 1/2 cup chickpeas
  • 1/2 teaspoon salt
  • 1 1/2 teaspoon pepper
  • 1/4 cup chopped green onions
  • 6 tablespoons lemon juice
  • 1 tablespoon chopped mint
  • 2 tablespoons chopped parsley
  • Water

Instructions:

  1. Prepare Swiss Chard Leaves:

    • Using fresh Swiss chard, place the leaves in hot water for 10 minutes to soften for rolling. If the leaves are too large, cut them in half.
    • Remove the ribs from the leaf and set the leaves aside.
  2. Prepare Filling:

    • Drain the chickpeas.
    • In a mixing bowl, combine the skinned chickpeas, half of the lemon juice, rice, salt, pepper, chopped green onions, chopped mint, and chopped parsley. Mix well to combine.
  3. Assemble Rolls:

    • Place a tablespoon of the filling lengthwise on a Swiss chard leaf, bringing the edges about 1/2 inch toward the center, and roll it up tightly as you would with a cigar.
  4. Arrange in Pan:

    • In a saucepan, arrange the stuffed Swiss chard rolls, alternating the direction of each layer to fit them snugly.
    • Add the remaining lemon juice and enough water to reach just below the level of the last row of rolls.
  5. Cook:

    • Bring the saucepan to a boil, then cover and reduce the heat to simmer for 45-60 minutes, or until all the water has evaporated and the rolls are tender.
    • If there’s excess water, remove the lid and simmer for an additional 10 minutes.
  6. Serve:

    • Place a plate over the top of the pan and, holding the plate and pot securely together, carefully turn it upside down so that all the rolls remain in the same mold on the plate as they were in the pan.
    • Serve the stuffed Swiss chard rolls hot, accompanied by yogurt for dipping.
