Ingredients:

Quantity Ingredient
4 cups Whole Wheat Flour
2 cups Unbleached All-Purpose Flour
1 tsp Salt
1 tsp Baking Soda
1/2 cup White Sugar
1 cup Brown Sugar
1 cup Skim Milk
1 tbsp Lemon Juice

Instructions:

  1. Prepare the Milk Mixture: In a small bowl, mix the skim milk and lemon juice together. Set aside. (You can also use buttermilk instead of this mixture if preferred.)

  2. Combine Dry Ingredients: In a large mixing bowl, combine the whole wheat flour, unbleached all-purpose flour, salt, baking soda, white sugar, and brown sugar.

  3. Add Milk Mixture: Gradually pour the milk and lemon mixture (or buttermilk) into the dry ingredients. Stir until a dough forms.

  4. Knead the Dough: Transfer the dough onto a floured surface (I prefer using whole wheat flour for this). Knead the dough for no more than a minute until it comes together.

  5. Shape the Dough: Shape the dough into a circle with a height of about two inches. Place it on a lightly oiled baking sheet.

  6. Cut the Dough: Using a sharp knife dusted with flour, make a cross (X) nearly halfway through the dough. This helps the bread expand while baking.

  7. Bake: Preheat your oven to 400°F (200°C). Bake the bread for about 40 minutes, or until it turns golden brown and sounds hollow when tapped with your knuckles or the handle of a spoon.

  8. Cool and Serve: Once baked, transfer the loaf onto a wire rack and let it rest for at least an hour before slicing. This allows the flavors to develop and ensures a moist and tender texture.
