Instructions:

  1. Prepare the Cauliflower Mixture:

    • Clean, wash, and grate the cauliflower.
    • Place it in a bowl and pour hot water over it.
    • Let it sit for 5 minutes, then drain and squeeze out the excess water.
    • Add lime juice, chopped green chili, 1 tsp salt, chopped coriander leaves, finely chopped onions, and grated ginger to the cauliflower.
    • Mix well and divide the mixture into 12 parts.
  2. Prepare the Dough:

    • In a large mixing bowl, sift the wheat flour and add 1 tsp of salt.
    • Rub in the margarine until the mixture resembles breadcrumbs.
    • Slowly add water to the flour mixture and knead to form a soft dough.
    • Cover the dough with a damp cloth and let it rest for 20 minutes.
    • After resting, knead the dough again and divide it into 12 equal-sized balls.
  3. Assemble the Parathas:

    • Take one dough ball and roll it out into a 4″ diameter disc on a floured surface.
    • Place one portion of the cauliflower mixture onto the center of the disc.
    • Carefully bring the edges of the dough together to enclose the filling and shape it into a ball again.
    • Roll out the stuffed dough ball into a 5″ diameter disc, ensuring the filling is evenly distributed.
  4. Cook the Parathas:

    • Heat a griddle or tawa over medium-high heat.
    • Place one stuffed disc onto the hot griddle and cook until bubbles start to appear on the surface.
    • Flip the paratha and cook the other side until golden brown spots appear.
    • Brush both sides of the paratha with ghee or oil while cooking.
    • Repeat the process with the remaining dough balls, adjusting the heat as needed.
