  • 1/3 cup ghee

Instructions:

  1. Prepare the Dough:

    • In a saucepan, warm the water, sugar, and ghee over medium heat until the sugar dissolves completely.
    • Transfer the mixture to a mixing bowl and let it cool slightly.

  2. Shape the Shankarpala:

    • Divide the dough into 4 equal parts.
    • Roll out each portion into thin chapatis, about 1/3 inch thick, using a rolling pin.
    • Using a sharp knife or a cookie cutter, cut the rolled dough into small diamond shapes. Alternatively, you can cut them into your desired shape.
  3. Rest and Dry:

    • Gently lift the diamond-shaped Shankarpala with a spatula and place them on a clean, dry cloth.
    • Allow the Shankarpala to air dry for about 1 hour. This step helps in achieving a crisp texture when frying.
  4. Fry the Shankarpala:

    • In a deep frying pan or kadhai, heat ghee over low-medium heat.
    • Once the ghee is hot, carefully add the diamond-shaped Shankarpala in batches, ensuring not to overcrowd the pan.
    • Fry the Shankarpala in hot ghee until they turn light golden brown and crisp on both sides. Keep an eye on them to prevent burning.
    • Once fried, use a slotted spoon to remove the Shankarpala from the ghee and place them on a plate lined with paper towels to drain any excess oil.
