Instructions:

  1. Prepare Khameer: Begin by making the khameer one night before. This allows it to ferment properly, enhancing the flavor of the naan.

  2. Prepare Dough: Sieve the flour and salt into a large mixing bowl. Add the anise seeds and butter to the flour mixture. Mix well to incorporate all the ingredients evenly.

  3. Combine Wet Ingredients: Gradually add the egg, warm milk, and khameer to the flour mixture. Knead the dough thoroughly until it becomes smooth and elastic.

  4. Let Dough Rest: Cover the dough with a clean kitchen towel and leave it in a warm place to rise for approximately 2 hours. This allows the dough to ferment and develop flavor.

  5. Divide Dough: Once the dough has risen, divide it into 10 equal parts.

  6. Shape Naan: Take each portion of dough and shape it into a ball using a little dry flour to prevent sticking. Cover the balls and let them rest for 15 minutes.

  7. Flatten Dough: Flatten each dough ball into a pancake shape by gently tossing it from one hand to the other. Gradually pull one side of the pancake to create a triangular or oval shape.
