Instructions:

  1. Begin by lining the base of six dariole moulds with baking parchment, ensuring easy removal later on.

  2. In a mixing bowl, whip the cream with half of the caster sugar until stiff peaks form, creating a light and airy texture.

  3. Gently fold in the orange juice, yogurt, crushed meringues, and 100g of the frozen raspberries into the whipped cream mixture, ensuring everything is evenly incorporated.

  4. Spoon the creamy mixture into the prepared moulds, distributing it evenly, and then place them in the freezer for about an hour to set.

  5. Meanwhile, prepare the raspberry coulis by pureeing the remaining raspberries with 6 tablespoons of water until smooth. Strain the puree through a sieve to remove any seeds.

  6. Stir in the rest of the caster sugar into the raspberry puree, adjusting the sweetness to your preference.

  7. Once the meringue crunch has set, carefully invert the moulds onto serving plates, creating a stunning presentation.
