Ingredients:
- 500g maida (all-purpose flour)
- 200g channa dal (Bengal gram)
- 1/2 tsp salt
- 1/2 tsp red chili pepper
- 250ml water
- 1/2 tsp garam masala
- 4 tbsp oil (2 tbsp for dough, 2 tbsp for roasting)

Prepare the Dough:
- In a large mixing bowl, combine the maida (all-purpose flour), salt, and 2 tbsp of oil.
- Gradually add water and knead to form a soft dough. Set aside.

Prepare the Chana Dal:
- Rinse the chana dal thoroughly and soak it in water for 6 hours.
- After soaking, drain the water and transfer the dal to a pressure cooker.
- Add a glassful of water to the pressure cooker and cook until you hear one whistle.
- Turn off the gas and allow the pressure to release naturally.

Grind the Dal:
- Once the dal is cooked and cooled down, drain any excess water.
- Grind the dal into a coarse paste using a grinder or food processor.

Prepare the Filling:
- Heat 2 tbsp of oil in a kadahi (wok) over medium heat.
- Add the ground dal paste and roast it for 3-4 minutes, stirring continuously.
- Sprinkle in the red chili pepper, garam masala, and any additional masala powder of your choice.

- Allow the dal mixture to cool down to room temperature.
- Divide the prepared dough into small balls.
- Flatten each dough ball into a small disc and place a spoonful of the dal filling in the center.
- Fold the edges of the dough to enclose the filling and roll it out into thin parathas.

- Heat a tawa (griddle) or skillet over medium heat.
- Place the rolled paratha on the hot tawa and cook until golden brown spots appear on both sides, flipping as needed.
