Recipe Yield:

  • Yield: 50 thin paranthas

Ingredients:

  • 500g maida (all-purpose flour)
  • 200g channa dal (Bengal gram)
  • 1/2 tsp salt
  • 1/2 tsp red chili pepper
  • 250ml water
  • 1/2 tsp garam masala
  • 4 tbsp oil (2 tbsp for dough, 2 tbsp for roasting)

Instructions:

  1. Prepare the Dough:

    • In a large mixing bowl, combine the maida (all-purpose flour), salt, and 2 tbsp of oil.
    • Gradually add water and knead to form a soft dough. Set aside.
  2. Prepare the Chana Dal:

    • Rinse the chana dal thoroughly and soak it in water for 6 hours.
    • After soaking, drain the water and transfer the dal to a pressure cooker.
    • Add a glassful of water to the pressure cooker and cook until you hear one whistle.
    • Turn off the gas and allow the pressure to release naturally.
  3. Grind the Dal:

    • Once the dal is cooked and cooled down, drain any excess water.
    • Grind the dal into a coarse paste using a grinder or food processor.
  4. Prepare the Filling:

    • Heat 2 tbsp of oil in a kadahi (wok) over medium heat.
    • Add the ground dal paste and roast it for 3-4 minutes, stirring continuously.
    • Sprinkle in the red chili pepper, garam masala, and any additional masala powder of your choice.
  5. Assemble the Parathas:

    • Allow the dal mixture to cool down to room temperature.
    • Divide the prepared dough into small balls.
    • Flatten each dough ball into a small disc and place a spoonful of the dal filling in the center.
    • Fold the edges of the dough to enclose the filling and roll it out into thin parathas.
  6. Cook the Parathas:

    • Heat a tawa (griddle) or skillet over medium heat.
    • Place the rolled paratha on the hot tawa and cook until golden brown spots appear on both sides, flipping as needed.
    • Brush with oil or ghee as desired during cooking for added crispiness.
  7. Serve:

    • Serve the Bikaneri Parathas hot with Aloo Dum Masala, fresh Raita, and your favorite Chutney for a delicious and satisfying meal experience!

Tips:

  • To achieve the perfect thinness, roll out the parathas as thinly as possible, resembling the texture of a papad.
  • For best results, prepare the parathas an hour before serving to ensure they stay soft and fresh.
  • Customize the spice level according to your taste preferences by adjusting the amount of red chili pepper and garam masala.
  • Experiment with different fillings such as paneer (Indian cottage cheese) or mixed vegetables for a unique twist on this classic recipe.
